We’re dedicated to exploring how quality ingredients can enhance health and wellness. Our Les Cousines EVOO serves as the foundation for a healthy gut and skin. With its low acidity and high polyphenol content, our EVOO meets the most important criteria for promoting overall well-being.
Our olive oil maintains an acidity level below 0.8%, meeting Extra Virgin standards. This low acidity indicates minimal processing and high-quality olives, preserving vital nutrients. Oleocanthal, a key phenolic compound in EVOO, acts as an anti-inflammatory agent by inhibiting COX enzymes, similar to ibuprofen.
Polyphenols are powerful antioxidants that help combat oxidative stress and inflammation in the body, which can lower the risk of chronic diseases such as heart disease, diabetes, and certain cancers. These compounds also give EVOO its characteristic peppery and sometimes bitter taste.
Cold-pressed olive oil is extracted from olives without the use of heat, preserving its natural flavors, aromas, and beneficial nutrients. This method ensures a higher quality oil with a richer taste and more health benefits compared to oils processed with heat or chemicals.

We work with small family farms and monastery groves that use traditional, regenerative methods. We harvest early, press once, and bottle in small batches — no industrial blending, no refining, no shortcuts.
Our olive oil is grown and produced following organic and traditional practices in Northern Lebanon.
As a small, family-run business, we haven’t yet completed the U.S. organic certification process — it’s a costly and lengthy procedure for small importers — but it’s a goal for our future American market.
We hold a notarized letter from the monastery confirming that the groves are cultivated using time-honored, natural methods. Their land and care represent the truest expression of traditional organic agriculture as it has existed for generations.
