Our EVOO is made of Aaryouni olives, singled-sourced, and unfiltered. We believe the less we intervene in the process – the better. These olives are some of the most unique in the Mediterranean.
Nestled in the Qadisha Valley in northern lebanon is a locally-owned farm where we source our olive oil. The Wadi Qadisha, meaning "Holy Valley" in Arabic, features a lush geography that is supported by unique terraced terrain, efficient rivers, and natural irrigation systems that allows it be the perfect place to grow olives and all kinds of crops.
Our olive oil is cold-pressed, meaning it’s extracted without heat to preserve its natural flavors and nutrients. Unlike refined oils, which undergo heat and chemical processing that strip away nutrients and flavor, our unrefined extra-virgin olive oil is pure and packed with antioxidants and healthy fats. This vibrant, nutrient-rich oil offers a richer taste and enhanced benefits for your skin, hair, and health—nothing compares to the quality of true, unrefined extra-virgin olive oil.

Our olive oil maintains an acidity level below 0.8%, meeting Extra Virgin standards. This low acidity indicates minimal processing and high-quality olives, preserving vital nutrients. Oleocanthal, a key phenolic compound in EVOO, acts as an anti-inflammatory agent by inhibiting COX enzymes, similar to ibuprofen.

As a small, family-run business, we haven’t yet completed the U.S. organic certification process — it’s a costly and lengthy procedure for small importers — but it’s a goal for our future American market.
We hold a notarized letter from the monastery confirming that the groves are cultivated using time-honored, natural methods. Their land and care represent the truest expression of traditional organic agriculture as it has existed for generations.
